Old vines give the wine a unique elegance and aromatic finesse.
Intense purple colour. Prune and blackcurrant nose.
Very structured and concentrated with very soft tannins and a long aromatic persistence.
The date of harvest is defined following very regular controls of maturity and tasting of the berries. The grapes are harvested by hand and the greatest care is taken with the bunches, which are placed whole in vats. After a few days of maceration, fermentation starts spontaneously with the indigenous yeasts. Extraction is essentially done by light cap-punching. After pressing in a vertical press, the wines are aged for a year and a half.
It is a traditional wine. It can accompany rustic cuisine, with cold meats, peppery terrines, red meat in sauce, beef bourguignon, bull stew, etc…
